Bok choy and Shitake soup

This bok choy and shitake soup comes together so fast and is a great vegetarian meal!
Ingredients
1 head of bok choy
1/3 cup dried shitake mushrooms
1/2 onion (finely diced)
4 cloves garlic (minced)
1 1/2 tbsp minced ginger
1-2 green onions, finely sliced
2 tbsp soy sauce
2-3 star anise
4 cloves
2-3 pieces cinnamon
5 cups water/broth
(Stock cube if using water)
Noodles of choice
Soak shitake mushrooms in hot water to rehydrate. Sauté onion, ginger, garlic and white part of green onion in tbsp of oil. Add water/broth, soy sauce and spices. Let this simmer for 15-20 mins. Remove spices onions etc from broth. Add the bok choy, mushrooms and noodles. If you’re using noodles that will take more time than your vegetables to cook, then add bok choy later. Simmer till everything is cooked through. Drizzle with sesame oil and sprinkle greens of spring onion on top.
