Strawberry mousse
Ingredients:100g whipping cream100g whole milk cream400g strawberries20g water20g icing sugarInstructions:First wash the strawberries and slice them. Now in a pan add the strawberries ,icing sugar and water. Keep on low flame for 15 mins, while stirring. As the strawberries start to soften, continue to stir and they will break down. When the strawberries soften and mash turn off the stove. This is our strawberry coulis. Now in a beater add 100g whipping cream and whip until soft peaks. Now add your whole cream and whip again. When soft peaks are reached again add 3/4 of your strawberry mixture and whip for 2-3mins. Now cool the mousse for around 20 mins. Afterwards take it out and pipe in your serving glasses using a star tip and piping bag. You can use the remains strawberries coulis as a topping.
