Cherry swirl ice-cream

Ingredients:
Cherry ripple
500g cherries (pitted)
1/3 cup sugar
1/3 cup water
Chocolate layer
80g dark chocolate
2 tbsp cream
3 cups prepared vanilla custard
300ml whipping cream
1/3 cup condensed milk
500g cherries (pitted)
1/3 cup sugar
1/3 cup water

Instructions:
Start my adding cherries, water and sugar to a pan. Cook on a med heat until it’s reduced and becomes jam like in texture.
Melt the chocolate and cream together till you have a smooth sauce.
Whip the cream till it thickens, add in the condensed milk and custard and whip till you get stiff peaks. Now it’s time to assemble!
In your dish (I used a loaf pan) start by lining it with baking paper or cling film. Start adding the cream layer, dollop some of the cherries and chocolate on top and swirl it. Repeat these layers till you reach the top of your pan. Smooth out the top and cover with baking paper/cling film and leave to freeze overnight!
